Apple Cinnamon Turnovers

An extremely simple, but elevated sweet treat that can be used as a dessert (with vanilla ice cream), or breakfast. Using puff pastry sheets, apples, honey, and cinnamon, this is a very easy crowd pleaser.

Ingredients
  

  • 2 Puff pastry sheets I used 1 sheet for 4 “pies”
  • 2 honeycrisp apples peeled
  • Honey you will need about 2 tbsp for each pie
  • Cinnamon to sprinkle on each pie
  • Vanilla bean ice cream 1 scoop per pie
  • Egg for egg wash
  • Powdered sugar to sprinkle on top

Instructions
 

  • Remove your puff pastry from the freezer to thaw (you will want to do this a few hours before, as they will not roll out if they're frozen.
  • Preheat your oven to 400 degrees. Line a baking sheet with parchment paper.
  • Drizzle honey down in about a 2x3.5 inch rectangle - about 2 tbsp.
  • Layer about 6-8 apple slices on top of the honey. Drizzle with another layer of honey and sprinkle with cinnamon (don’t be shy).
  • Cut your puff pastry sheet into 4 rectangles and lay them on top of your apples. Seal the pastry to the parchment paper by pressing gently on the edges, and then gently press on the apples to make sure they stick.
  • Crack your egg in a small bowl and scramble. Using a pastry bush, rub with egg wash onto the pastry and bake for 20 minutes.
  • Remove from oven and let cool before flipping. Flip over gently and top with powdered sugar and more cinnamon. Put a big scoop of vanilla ice cream and ENJOY!
