Fried Pickle Dip

If you love pickles, you will love this recipe! A creative spin on my favorite fair food: Fried Pickles! Using a crispy Panko topping for the "fried texture", this creamy, dilly dip is the perfect appetizer to bring to a summer cookout, a lakeside picnic, or an appetizer to your dinner party.

Ingredients
  

  • 3/4 cup breadcrumbs
  • 1 tbsp butter
  • 8 oz cream cheese softened for at least 2 hours in room temp
  • 1 cup plain green yogurt
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1.5 cup chopped dill pickles
  • 1 tbsp chopped fresh dill
  • 1.5 tbsp pickle juice
  • pinch salt & pepper

Instructions
 

  • In a large bowl, with a hand mixer, mix your softened cream cheese, and greek yogurt - mix together well (there will probs be little clumps but that’s okay!).  In a large pan, heat butter over medium heat.  
  • Add in garlic powder, onion powder, chopped dill pickles, chopped fresh dill, salt and pepper, mix well to combine with a spatula. 
  • Place mix into a low bowl for serving. Spread it out evenly in the bowl and refrigerate while you toast the breadcrumbs to solidify and thicken.
  • Once melted, add in your breadcrumbs and start to brown. These will burn quickly so do not walk away. Just keep stirring until golden - should only take a few minutes! 
  • Remove from heat and let cool for 20 mins. Remove dip from fridge and top with your crispy breadcrumbs (you may have extras so save it for when your dip needs a lil more crumbs towards the end).
  • Serve with pretzels, or crackers! I used the pretzel thins from Trader Joe’s and they were perfect. ENJOY!
