Air-Fried Breakfast Flautas

An American breakfast spin on a Mexican classic - flautas. Loaded with bacon, egg, and cheese and topped with a homemade pico de gallo and a spicy crema - these are bound to be your new favorite breakfast.

Ingredients
  

PICO DE GALLO

  • 1 1/3 cup cherry tomatoes chopped
  • 1/4 cup finely chopped red onion
  • 1/2 tbsp jalapeno 1 tbsp if you'd like more spice
  • 1/4 cup chopped cilantro
  • 2 pinches of salt
  • Squeeze of a lime

FLAUTAS

  • 7-8 slices of bacon 8oz
  • 9 eggs
  • 1.5 c shredded cheddar

SPICY YOGURT SAUCE

  • 1/2 cup plain Greek yogurt
  • 2 tbsp choice of hot sauce
  • 2 tbsp milk
  • 1/4 tsp garlic powder
  • Pinch of salt

Instructions
 

  • Start by making your pico de gallo. Chop your cherry tomatoes and set into a small bowl. Finely chop red onion and add to tomatoes. Chop your jalapeno (removing the seeds prior to avoid intense spice), and chop finely. Add to bowl. Finely chop cilantro and add to mixture. Slice a lime in half and squeeze about 1 tsp of lime juice to the mix. Add 2 pinches of salt. Mix well and set in the fridge.
  • Make your spicy yogurt sauce. In a small bowl, add in your plain greek yogurt, your choice of hot sauce, garlic powder, salt, and water. Mix this well until the hot sauce is fully combined. Your sauce should be drippy to easily drizzle onto flautas. Add more hot sauce to your liking (or water if it needs to be thinner).
  • Get your bacon and chop into small chunks and set aside. Heat a large skillet to medium heat. While your skillet is heating, crack your eggs into a large bowl and whisk. Set aside. Add your bacon to your hot pan and stir it around to evenly spread it out. Let it sit for a 1-2 minutes to start browning. The entire process of cooking the bacon should take about 5-6 minutes. You want to remove it from heat when it is slightly crispy and brown.
  • Drain the fat from the bacon into a grease jar (not down your sink drain). Place your pan back on the stove on low-medium heat. Add your eggs to the pan and start to stir them around to get scrambled eggs. When they're *almost* cooked through, remove from heat and add in your shredded cheese. Stir together.
  • Get your tortillas ready and place about 1/4c - 1/3c of mixture into each tortilla in the middle (you can eyeball this. You'll know it's too much if you cannot roll your tortilla). Place your tortilla in your air fryer tray, as many as you can fit in 1 drawer! Make sure they've got space in between them though so they don't stick together.
  • Spray with olive oil or avocado oil cooking spray and air fry at 375 for 10 minutes.
  • Remove from air fryer and place 2 flautas onto a plate. Drizzle with your spicy yogurt sauce and top with pico de gallo. Add avocado if you'd like!
