I cannot believe it’s taken me this long to share these air-fried breakfast flautas recipe. This is an all time favorite in our household, we’ve been making them for years! They originally started out as shredded chicken flautas, but then I had the idea to make breakfast flautas – and good lord, it did not disappoint.
These are such a satisfying and filling breakfast. They taste so fresh with the homemade pico de gallo, and the spicy yogurt sauce has a good amount of kick to it while being balanced out from the yogurt. These are a great brunch to make for a group of people, or just 2 of you and to have leftovers for the week.
THE THREE PARTS OF THE AIR-FRIED BREAKFAST FLAUTAS
Homemade pico de gallo
Once you make it at home, you’ll never bought store-bought pico de gallo ever again. It is incredibly easy to make, only a few simple ingredients, and the flavor is so hard to beat. The key to this is finding red, sweet, and ripe cherry tomatoes – so choose wisely at the store 🙂 I add 1/2 tablespoon of jalapeño to my pico de gallo, but feel free to add more, or less, to your liking.
Spicy Yogurt Sauce
Don’t skip on this part. This sauce adds so much flavor to the dish. It definitely has some heat to it though! So, if you’re sensitive to spice, take the hot sauce down a notch. You can do this by adding more milk in its place. You want this sauce to be drippy for easy drizzling.
The Flauta
A crispy, rolled tortilla filled with American breakfast classics – bacon, egg, and cheese. It’s crispy on the outside and warm and cheesy on the inside. These are delicious on their own but even better with the two toppings! This is the air-fryer that I have – I love it and it gets used almost daily in my house!
HOW TO STORE OR SAVE THESE FOR LEFTOVERS
These actually store really well for leftovers. If you’ve air-fried all of them already, just store them in a Tupperware and when you’re ready to reheat, simply microwave or put them in the oven to reheat. If you’re putting them in the oven, put them at 300 degrees for about 15 minutes.

Air-Fried Breakfast Flautas

An American breakfast spin on a Mexican classic – flautas. Loaded with bacon, egg, and cheese and topped with a homemade pico de gallo and a spicy crema – these are bound to be your new favorite breakfast.
Start by making your pico de gallo. Chop your cherry tomatoes and set into a small bowl. Finely chop red onion and add to tomatoes. Chop your jalapeno (removing the seeds prior to avoid intense spice), and chop finely. Add to bowl. Finely chop cilantro and add to mixture. Slice a lime in half and squeeze about 1 tsp of lime juice to the mix. Add 2 pinches of salt. Mix well and set in the fridge.
Make your spicy yogurt sauce. In a small bowl, add in your plain greek yogurt, your choice of hot sauce, garlic powder, salt, and water. Mix this well until the hot sauce is fully combined. Your sauce should be drippy to easily drizzle onto flautas. Add more hot sauce to your liking (or water if it needs to be thinner).
Get your bacon and chop into small chunks and set aside. Heat a large skillet to medium heat. While your skillet is heating, crack your eggs into a large bowl and whisk. Set aside. Add your bacon to your hot pan and stir it around to evenly spread it out. Let it sit for a 1-2 minutes to start browning. The entire process of cooking the bacon should take about 5-6 minutes. You want to remove it from heat when it is slightly crispy and brown.
Drain the fat from the bacon into a grease jar (not down your sink drain). Place your pan back on the stove on low-medium heat. Add your eggs to the pan and start to stir them around to get scrambled eggs. When they’re *almost* cooked through, remove from heat and add in your shredded cheese. Stir together.
Get your tortillas ready and place about 1/4c – 1/3c of mixture into each tortilla in the middle (you can eyeball this. You’ll know it’s too much if you cannot roll your tortilla). Place your tortilla in your air fryer tray, as many as you can fit in 1 drawer! Make sure they’ve got space in between them though so they don’t stick together.
Spray with olive oil or avocado oil cooking spray and air fry at 375 for 10 minutes.
Remove from air fryer and place 2 flautas onto a plate. Drizzle with your spicy yogurt sauce and top with pico de gallo. Add avocado if you’d like!
