This is genuinely one of the better salads I have ever made. The orange + miso vinaigrette dressing is drinkable, straight up. It tastes so fresh and light, but filling at the same time. I made this salad in probably 20 minutes, so it can come together pretty quickly with a couple quick cheat codes.
A couple ways to make this spicy cucumber salad with orange + miso vinaigrette as efficient as possible!
USE A MANDOLIN – I do not know why it took me so long to get one of these, but it probably saved me 15 minutes of thinly slicing 3 cucumbers, 1 shallot, and 1 jalapeño. It made this salad very easy, and I will definitely be using that gadget a lot more in the kitchen. This is the one I have!
BUY PRE-COOKED SHREDDED CHICKEN – again this will save you a bit of time from having to not cook the chicken. I happened to have already cooked chicken in my fridge so I just used that! But most grocery stores will have rotisserie chickens, or already prepared chicken in the hot food section! This is an easy sub to save some time.
FOR MY PEOPLE THAT CAN’T HANDLE THE HEAT
This salad definitely does have some heat to it – so if you’re a little bit sensitive to spice, feel free to either de-seed the jalapeño, or just omit it entirely. Although, I’m a firm believer that every thing should have at least a little bit of spice to it. ‘
