I am a foodie turned full-time Recipe Developer. Food is the center of my world, and I believe it one of the most important things in bringing people together.
If summer were an appetizer – this would be it. This honey balsamic roasted strawberries with whipped feta is a super simple appetizer to put together and such a great one to bring to any summer soiree. There ain’t no time better to use up all the beautiful strawberries than the months of July and August.
My favorite part about this is the salty + sweet aspect. The naturally sweet strawberries, combined with a little honey and then paired with a salty whipped feta is the perfect combination. You can pair this with your favorite toasted bread – I’m usually a sucker for a French baguette or some sort of sourdough.
A LITTLE PRO TIP: after you toast your bread, rub it with a clove of raw garlic (slice in half first).
This gets the garlic oils onto the bread, without it being too potent. I do this almost anytime that I have toasted bread that I’m serving.
EQUIPMENT YOU’LL NEED
For this recipe, you’ll only need a food processor – If you don’t have one of these, this is the one I have. I use this a lot in the kitchen – it’s great for sauces, dips, salsas, etc. This one is nice and small too which is great because it doesn’t take up a ton of space. I highly recommend this one!
As always, I hope you enjoy this recipe and please comment below if you have any questions <3 xoxo
Honey Balsamic Roasted Strawberries with Whipped Feta
megan sheley
One of my all-time favorite recipes to make every summer with the strawberries are at their best. A perfect combination of salty and sweet – this is the best appetizer to bring to any summer soiree.
Preheat your oven to 350 degrees. Slice your strawberries into 1/4's (removing the stems) place into a large bowl with honey and balsamic vinegar. Thinly slice the shallot and mix that in with the strawberries.
add to a sheet pan with parchment paper and roast for 30-35 minutes. Let these cool completely.
While the strawberries are roasting in the oven, to a food processor add the feta, greek yogurt, olive oil, cracked pepper, garlic, and red chili flakes. Process until smooth and place in the fridge.
Once the strawberries are cooled, pour feta into a low bowl, top with strawberries, add chopped fresh basil, drizzle with olive oil. Serve with toasted bread! Enjoy!
