Honey Balsamic Roasted Strawberries with Whipped Feta

One of my all-time favorite recipes to make every summer with the strawberries are at their best. A perfect combination of salty and sweet - this is the best appetizer to bring to any summer soiree.

  • 1 food processor

Ingredients
  

  • 8 oz. feta
  • 1/2 cup Greek yogurt
  • Drizzle of olive oil
  • 1/2 tsp Red chili flakes
  • Cracked pepper
  • Minced garlic about 1/2 tsp
  • 2 lbs. fresh strawberries
  • 2 tbsp balsamic vinegar
  • 1.5 tbsp honey
  • 1/2 shallot about 1/4 cup
  • French baguette
  • Fresh basil chopped

Instructions
 

  • Preheat your oven to 350 degrees. Slice your strawberries into 1/4's (removing the stems) place into a large bowl with honey and balsamic vinegar. Thinly slice the shallot and mix that in with the strawberries.
  • add to a sheet pan with parchment paper and roast for 30-35 minutes. Let these cool completely.
  • While the strawberries are roasting in the oven, to a food processor add the feta, greek yogurt, olive oil, cracked pepper, garlic, and red chili flakes. Process until smooth and place in the fridge.
  • Once the strawberries are cooled, pour feta into a low bowl, top with strawberries, add chopped fresh basil, drizzle with olive oil. Serve with toasted bread! Enjoy!
