Honey Balsamic Roasted Strawberries with Whipped Feta

One of my all-time favorite recipes to make every summer with the strawberries are at their best. A perfect combination of salty and sweet - this is the best appetizer to bring to any summer soiree.

- 8 oz. feta
- 1/2 cup Greek yogurt
- Drizzle of olive oil
- 1/2 tsp Red chili flakes
- Cracked pepper
- Minced garlic about 1/2 tsp
- 2 lbs. fresh strawberries
- 2 tbsp balsamic vinegar
- 1.5 tbsp honey
- 1/2 shallot about 1/4 cup
- French baguette
- Fresh basil chopped
Preheat your oven to 350 degrees. Slice your strawberries into 1/4's (removing the stems) place into a large bowl with honey and balsamic vinegar. Thinly slice the shallot and mix that in with the strawberries.
add to a sheet pan with parchment paper and roast for 30-35 minutes. Let these cool completely.
While the strawberries are roasting in the oven, to a food processor add the feta, greek yogurt, olive oil, cracked pepper, garlic, and red chili flakes. Process until smooth and place in the fridge.
Once the strawberries are cooled, pour feta into a low bowl, top with strawberries, add chopped fresh basil, drizzle with olive oil. Serve with toasted bread! Enjoy!
